This summer Mediterranean Delicacies invited me to join their recipe project where content creators were invited to create their own recipe showcasing proudly South African ingredients. I LOVE Mediterranean Delicacies and often reply on their products when I’m testing out recipes or inviting friends over for snacks.
Because I’m generally quite greedy and couldn’t make up my mind, I decided to make 2 plates. The first is quick and simple ostrich salad, made up entirely by myself (hence how easy it is!). The second is more complicated, a feta stuffed peppadew and bacon quiche. I used Gordon Ramsay’s peek and pancetta quiche recipe to help me with this one. Here are the ingredients I used:
OSTRICH SALAD
Ingredients:
- Ostrich Fillet
- Salt and Pepper
- Fresh rocket
- Mediterranean Delicacies capers
- Mediterranean Delicacies grilled pickled asparagus
- Mediterranean Basil Pesto
FETA STUFFED PEPPADEW AND BACON QUICHE
Shortcrust Pastry (Recipe by Gordon Ramsay)
Ingredients:
- 200g plain flour
- Pinch of Salt
- 100g room temperature butter
Filling
- 4 eggs
- 60 mls of cream
- 100g mature cheddar
- 2 tablespoons of chopped parsley
- “Chef’s pinch” of salt and pepper
- Mediterranean feta stuffed pepperdews
- 200g bacon (cooked with fat mostly removed)
- Mediterranean Parmesan cheese
Basic General Ingredients:
- Spray & Cook
- Olive Oil
- Salt
- Black Pepper
Basic Utensils:
- Baking beads or lentals (as I use)
- Wax paper
- Scale
